Does anyone know when you come to a stop sign or the "word" stop in the road why is it not in Spanish?

Not just in Spain. I think all EU countries use the STOP in the traffic sign after the 1968 Vienna Convention.
Central and S American countries use Alto or Pare but, of course, they aren't in the EU.
The convention is why UK stopped putting NO ENTRY on signs and just used the white bar.

Do not even know why they have signs in Spain, as not many actually pay attention to them.

Just a little mention if you don't stop at a stop sign and I do mean stop and the police are about they will fine you and it is a hefty fine.

Altos is quite correct, if you come up to a stop sign, irrespective of whether you can see every eventuality, you are obliged by Spanish law to stop & wait four seconds before moving. Four seconds may not seem !long but try counting whilst waiting & see how much horn you get from drivers behind!!!!!

The series of crossroads traversing the open area from Doña Pepa to Consum is a nightmare. If the police spent some time observing the constant stream of dangerous drivers that don't even slow down at the stop signs, let alone stop for four seconds, they would have a hefty haul in fines. As with many laws here in Spain, they just aren't enforced enough to make people bother to observe them.
