Whats the average hourly rate for bar/restaurant work? Also apprentice hourly pay is this significantly lower and or dependent on the job role ie butcher/hairdresser ? Thanks

Bar and restaurant in this area can range from about 4 to 8 euro an hour. Not a lot and can be quite hard work and long hours to get anywhere near enough. You can't rely on tips here, either. Only the visitors tip and it is not a Spanish thin nor even a German/Scandinavian thing so no 10%, usually just the small change that's left over.
Cost of living is no longer as cheap as it used to be. It is cheaper than UK for many things but it does more or less compare now with the crashing pound. Yes, you'll be paid in euro but prices here are going up as well. Those working in Benidorm for the summer normally share accommodation with several others, share the bills etc and can rely on tips from the Brits.
Also many places are very seasonal. Torrevieja, for example, has a population of around 100,000 but goes up to 600,000 plus end of June to beginning of September. Many bars and restaurants close down after that and some places can be like ghost towns. Try and pick somewhere with good, all year round work rather than just a few months on subsistence wages.

i know someone who was only paid 2e 50cents per hour, cash in hand. bar work.

In normal circumstances it is around 6/7e per hour
