I find most places that do english food are good at cooking what you ask for I often have just the veg with salad and chips just ask and they will do what you like

The Spice Hut in Quesada has some very nice vegetarian options.

if you want paella try Aneto in Benimar they do all types.

Vegetarian restaurant near fountain in torrevieja behind alingui restaurant. We have been a few times when friends come and they love it.

believe it or not my daughter always insists on going to the patagonia steak house....she is always impressed and they seem to take pride in their veggie options rather than offer the normal "well we can do an omelette"

As commented, a few places do a reasonable veggie option, but the best actual veggie restaurants we have found are in Alicante and Elche. Our most recent visit was to Bodhigreen in Alicante. Vegetarian/vegan and very popular.

Some we have already tried.
Others we will give a try.
Things have certainly improved for vegetarians since we first moved here.

The vegetarian restaurant in Torrevieja has just reopened after being closed for pretty much over 6 months. It's now called Beet Vegetariano

Visited last night, it's fair to say it's had a MAJOR investment. The inside is far more light and bright thank before, high ceilings, a light wooden interior with a nice area in the back with a high skylight which lets in lots of natural like.

The menu is similar to that from the previous reincarnation with some additions.

We had a fabulous meal last night.

Prices have increased slightly across the board, but it is well worth a visit.
