when driving from Los Montesinos on the La Marquesa road to VillaMartin I've noticed red circles with Roman numerals in painted on the same of the road. Just wondered what they were?

Given that they're relatively close together, I'd guess that they are markers for a road race. A marathon maybe?

I was told the were to do with the Annual Walk to the church at La Marquesa
