Car insurance as a non resident on a RHD car

I currently have a car taxed and insured in Ireland.

I made enquiries with my insurance company regarding taking the car to Spain for an extended holiday 8 - 12 weeks, and I want to bring my dog with me
.
My Irish insurance company said that they could only cover me for a maximum of 8 weeks.

Has anyone here had the same problem and, as non residents, were they able to get insurance on a RHD in Spain or is there any way round it?

Plenty of companies insure foreign registered cars. Liberty Seguros for one plus others.
You'd have to ask if they do short terms.
Unusual for an insurance company to only do 8 weeks. 3 months is normally the maximum time for a UK company (they reduce it to 3rd Party only unless you pay extra) but maybe Irish companies are different.
Saga will do it for the whole year.

Try the caravan and camping club they may help but you would need to be a member,as they do motorhomes and caravans.

You cant keep UK plated car in Spain over 12 months I believe. Less than that if you are resident.

The 12 months is for the MOT which would be required.
If you are a resident you can't drive a UK (or any other foreign plated) car at all (except in exceptional circumstances). Visitors can keep the car, provided it is roadworthy and has up to date MOT and road tax from its own country. However, they can't drive it or be in Spain for more than 6 months out of the year. And it must go back to UK to get the MOT.
