Sub titles are a system built into the film you are watching and are nothing to do with what you are using to watch them with

This may not be quite as it seems.
If using a Firestick with official software - (as shown on the posters link above), then you can get subtitles on Netflix, Prime, Youtube (not always).
If you are using a hacked or ´cracked´Firestick and using random IPTV services or packages, then the answer is likely to be no.
IE if wanting UK live TV channels & sports, films etc, then usually these do not come with subtitles on IPTV Firestick - and the only way to get is via an official service, such as those mentioned - or FOR LIVE UK TV, via a satellite official service with a Skybox or official Freesat box in order to access the original digital subtitle encoding. You can find applications to find subtitles, but then you have to find them and they don´t always sync and the Firestick does not have inbuilt software to tweak - so a real faff and for most, not workable.
There are other workarounds IPTV wise - such as a VPN and a NOW TV Sky internet box, which will also allow you to access both UK live TV in Spain with English subtitles, but will add further costs with the VPN and if you want the subscription for the Now Sky TV.
The only other suggestion, which can help a little - if hard of hearing is ´sound bars´- which give you a much clearer sound and (often complained about) audio separation for voices/conversation.
The speakers in the modern TV´s unless hi-spec (most are not), are generally quite poor - we´ve found the soundbars can help as hearing deteriorates - obviously not a cure and depends on the severity of the hearing impairment, but if have partial hearing and struggle a little hearing conversation - this can make quite a difference.
