Secondly UK car insurance is pretty much universally predicated on UK residency and telling an insurance company fibs can result in extremely dire consequences.

If using a broker such as the one suggested do read the small print VERY carefully!

Liberty seguros are members of the MiB, along with many others. We insure our UK registered car with them and it appears on the UK's MiB database.

I have no doubt that there are Spanish insurance companies registered in UK who are MIB members and can legitimately insure cars there but they will be subsidiaries of the parent company and its they who cannot insure a UK regged car for use in UK.

Spanish insurers in Spain who tell you that they can will be taking from the Spanish perspective where their cover extends to use anywhere in the EU but they don't understand that that's not good enough if they themselves are not members of the UK MIB.

Believe me if you get stopped by the police in UK and your insurance is not with an MIB member you will absoutely be continuing your journey on foot!

EDIT: I note this morning that Liberty Seguros while perhaps not being an actual member of the MIB do have an arrangement with them as per this link https://www.libertyexpatriates.es/freedom-service-UK however I would suggest that amongst Spanish insurers they are unusual if not unique in this respect which reinforces my advice to read the small print.

I have had 3 uk vehicles over the last 10yrs insured in Spain and it is no problem to tax them as it shows up on the dvla data base , don't bother with asking the MIB , as the idiots they seem to employ do not have a clue , have spoken to them a number of times re this issue and they cant answer you ..!!

And as an aside if you think it is not correct how come you can insure thro DAS , Allianze , Zurich amongst others who are all euro ins companies, you will also find that a lot of the UK haulage companies also insure thro EURO companies as it is cheaper . ..!!!
