Completely agree that a car has to have a valid MOT in order for insurance to be valid, otherwise no one would bother, Insurance’s don’t mess about like that, they look for the legal reason not to pay out

Sorry thats not correct for insurance to be valid the car must have mot and tax to be legal on the roads

There are lots of conflicting opinions on the internet, and the answer seems to be that “it depends”.
This info from the Parkers website seems to summarise then situation quite well:

Driving without a valid MOT - check your car insurance

Driving without an MOT won't always make your insurance invalid. In most instances the insurers will still pay out in full - and if your car is stolen, or damaged, the payout will usually only be reduced to reflect the value of the car without a current MOT.

However, some policies state in the small print that an MOT must be in force.

If you drive on public roads without an MOT there will be a fine if you’re caught by the police, the only exception is if you’re travelling to a pre-booked MOT test, this must be a direct route though, and to your nearest garage that provides the test.

It wasn’t my original question but thankyou for your comment Pete as it is seems correct as yesterday I was out for the day with a good friend of mine who is a senior manager in car insurance at a uk insurance company,he confirmed that it would not invalidate your insurance but if you were to make a claim it would probably be reduced.
