The U.K. is experiencing over 30,000 new cases of covid everyday and there are 4 times as many hospitalisations as this time last year, and yet they are still relaxing the rules and allowing mixing and travel. I know symptoms are not as bad as previously but it is still being transmitted and cases are NOT coming down, so what am I missing?

You only have to see that graph and compare Aug last year to Aug this year

Infectiins are high at around 30k per day, but have been stable at that for a couple of months.
In hospital has also remained steady at around 1800 and deaths stable around 140 ave.
These may appear high but in the bigger scheme of things are now low in a population of 66 million.
Covid was also the main cause of death in the UK, but has now dropped outside the top 10 causes.
Almost 90% of over 16's now have at least one vaccine and over 80% double vaccines.
There really is only so much you can do before you need to start learning to live with any type of pandemic. This one is now classed as an endemic by senior health advisors, so something we now live with.
This is the time to start relaxing measures with limited caution as despite everything being relaxed things have not only stayed steady, but are now showing signs of going down.

In all the charts and graphs that I’ve seen there is no evidence that ‘new cases’ or deaths are coming down in the U.K. Everyday over 30,000 new cases daily for the last few weeks and deaths of over 150 a day. In the same period Spain has come down to 2-3 thousand new cases and less than 100 daily deaths.

The following link from the Torrevieja Forum clearly shows just how bad the infection rate in the UK is compared to the rest of Europe. The Uk is third worst, Spain is the 24th, out of 28.

Unless every country does the same amount of testing,it’s pointless comparing the amount of known cases.
