Buying used car privately - process and documents

I have bought via a dealer before but not privately.

Can anyone talk me through what documents I need to gather from the seller? Can I insure the car to drive home despite it yet being registered in my name? I know insurance covers the car in Spain but I don't want to trust in the sellers insurers and neither do I know if he might cancel it immediately once sold.

I plan on letting a gestor deal with the transfer paperwork on my behalf once back home.

Thanks jpeg but the vehicle isn’t local. Once lockdown restrictions are over I’m also planning on acquiring several more cars from far flung parts of Spain so would like to just get the process straight to replicate.
