You can risk keeping a car for more than 6 months, I know many that do. I also know people whos car has been taken away. Once MOT is out of date you have to register in Spain or return to UK for MOT. In the event of an accident Insurance companies go through everything to find a way of not paying.

And you can get MOT in spain but costs lot more,if you know how.I had LV but could only 180 days out the UK.so now have insurance in spain but it is English with 365 days out of spain as long I have mot and tax and it is a lot lower in cost.

When did they change the law to allow a UK registered car owned by a spanish resident to remain in Spain for more than 6 months?

Resident or not, a UK registered car can only be kept in Spain for 6 months.

According to GOV.UK website;

If you spend longer than six months of the year in Spain with your UK-registered car, Spanish law says you must register your vehicle with the Spanish authorities.

All of the Costa car insurance companies advertised in the freebies will cover your car. Shop around. If your MOT (ITV) runs out you can have an ITV Voluntario done at the local ITV station which costs you about 60 euros. You don't get a windscreen sticker but you get the certificate of conformity in case Traffico stop you.
