You sound like you are brilliant hosts and are doing the best you can to give your family a great time - However, I wonder if they would just like a few days around the pool or beach and BBQ's at home and picnics on the beach, to unwind, I know my family would after 5 days cramming all that lot in.
PS Actually what we usually do is a day doing stuff and then a lazy day, alternately - I don't know how you physically did all that in 5 days - We would be exhausted!

They'll be glad to get back home, that's crazy doing all that in 5 days. Surely they'd like to just chill out and enjoy some family time around the pool and on the beach?

El Hondo National Park makes a nice 1/2 day out. There are boardwalks across the lakes with lovely views and lots of different birds. There's also an education centre there and a covered area with picnic tables and chairs if you want to take your own picnic. http://turismocrevillent.org/en/naturaleza/el-hondo/
Oh and it's less than 1/2 hr from Quesada

Cartagena (head for the Port) underground car park. There's a tour bus around the City. Boat around the Bay with Historical Information. Good Menu of the Days. Very Spanish Food. There's a lift that goes up to the Castle. Amazing view up there. Very Interesting City.
Presume you've been to Torrevieja.
La Mata Lake to see the wildlife.
Santa Pola Salt Lakes to see Flamingos.
It depends what ages the Family are but there is usually something to interest them. Look in the Tourist Information Centres.
