I've just gone with Tuenti, a subsidiary of Movistar. Despite living here for 15 years, and having a contract with Movistar, I'd never heard of Tuenti, but they've got some good deals.
For 3 GB of data it's €6 per month, then you choose how much talk time - 60 minutes is €3 p.m., 120 minutes is €4 and so on. Texts are free if sent via the app.
For a relatively low user, I think it's an excellent package. The app is good for telling you how much you've used etc etc.

I got a sim card from O2 500 mins 500 mb 500 text all for 3 pound and you can call any where in Europe.
Its great, but you might have to get some one in UK to set it up, unless you are going back your self.

And they might pull the plug on it if you spend too much time away from UK, or use it too much away from UK!
Far better to just get a contract in Spain in my humble opinion.
I've got contracts in both countries, and a dual-sim phone that works both of them.

We use Yoigo unlimited

Unlimited Spanish national calls
Unlimited Spanish cross-network mobile calls
25GB of mobile data - way above average.

They do charge for SMS text, but we all use whatsapp as free!

€30 odd per month
