What you mean by private? Lots of licensed and insured taxis around.

Your clients will not be covered under the car insurance,if its not a registered taxi. The police are cracking down on illegal taxis not only in the airport but at the tolls aswell. Recently a coach operator using a minibus to transport people to Benidorm was stopped by the police. The passengers were staying in Benidorm for one night so had suitcases in the minibus. The police assumed it was a illegal taxi. The passengers and driver were all questioned at length as some of the cases had not had old airport stickers removed which made it look even more like an illegal airport run.The required documentation stating it was a travel company vehicle was not in the vehicle. The vehicle was allowed to carry on its journey after a lengthy hold up but the company was fined very heavily for their error.

They will have to be licensed.

They will need to have a licence in Spain for the carriage of passengers for hire or reward.
Such licences are difficult to obtain, even if you are Spanish, so if your 'private' cabby tells you he is fully licensed, ask for proof. There have already been some very good comments above on the dangers of using illegal 'taxis'.
