I have been to Punjabi Palace, but not necessarily my favourite & prefer the Madras at Sabores.
My tastes often seem to be different to others, so would prefer not to answer and leave it to others to try it.
I usually judge an Indian by it's Madras, but as there is no one recipe for that as all restaurants are different.

Theres indian cooking and indian cooking. One way to find out if you are being sold rubbish is to buy a main dish and a side dish that is similar base sauce, eg a Rhogan Josh and a Aloo saag side dish. If they are cheating, itll be obvious these have both used the same base sauce. Similarly you can judge the cut and quantity of red meat ina dish. The presence of whoel spices is a good sign, because it means they havent used a liquidiser, which is a nasty short cut used by some.
Bear in mind that the food that indian restuarants sell is the equivalent of fast food - the stuff that you get in India is nothing like it, although ive seen varous true authentic dishes now and then in indian restuarants in UK - I was suprised to se one of my favorites, Chettinard Peppered Chicken appear on the local menu back in UK, and even one of Mahdur Jaffreis (the godddes of indian cooking) recipies, Lamb in Peanut Sauce
The one in Montesinos is perfectly ok, cant fault the cooking, its what you'd expect. We shal have a mosey on down to the new one and check them out.In the end you eat what you like. Wheras thers definitely a bottom standard you'da expect, I thin kthe perfect meal is down to personal taste.

I agree it is not authentic Indian cooking
You get at these restaurants.they are already fast foods to suit the palates of expats .To save time and money they cook a whole pot of basic curry sauce. And then add ingredients to it.A proper Indian meal starting from scratch would take a minimum of one and half hours to cook

In Goa, the local fishermen will cook you a fish curry on the boat, moored in the quayside, when they return from fishing. Marvellous.
Yes they all use the 'pots of base sauce' method. You can tell when they do if you slice a piece of cicken open, the sauce wont have penetrated into the meat, having only been in the sauce five minute. Not that its not delicious, but it isnt the best way to do it, its just the fastest.

Well
I have been eating Indian food for over 42 years .
And I have tried most of the Indian restaurants around quesada , Rojales , Torrevieja.
Not to mention other areas that I have been on holiday around Spain.
When I order my meal I don’t expect to see it on my table for at least 30 minutes.
If so then it’s pre cooked and from a big pot of Sauce,
Not good.
Indian food should be cooked to order each individual one.
That for me is a good Indian restaurant.
So far the only one that I have found it the Spice Hut in Quesada.
But everyone has their own thoughts and taste.
Just my opinion

Wife and I ate here last week. Service was excellent and food tasty. We ate early and sitting in the conservatory gives a good view of the golf course.
We will return
