What is the latest on this situation. Regarding being third country status after December 2020 for uk citizens

Not yet been decided. Third country nationals, not third world. Just means not a member of the EU or EEA.
Meetings are going on, but obviously disrupted over the last few months, on regularising the status of UK citizens.
If you are already a resident then not a lot will change except that you will need a proper ID card and become a permanent resident in Spain once you have been here five years.
If you are applying for residency from 2021 onwards, you may need to show the same conditions as anyone else from outside the EU does. That is, own health insurance, higher level of income (or purchasing property over a certain value which is available to some countries now). You may also need to apply for a long stay visa from your home country if you are coming with the intention of becoming resident.
Still very much up in the air at the moment but the EU has requested all EU countries to look on current and future residents with concern and a favourable method of easing the transition even after UK has left.
Lots of it will do with what the UK decides on how to treat EU citizens. For example, if Spanish citizens living in UK get continued access to the NHS then UK citizens in Spain will get access to the Spanish NHS under the same rules as Spanish citizens.
Very much down to what the UK does by the sound of it.

Yes, as expected, its to much to expect the EU to take the initiative isn't it ? Mr Barnier has already been told this week to stop playing at being the referee, he's just a player like all the others involved in the Brexit negotiations.
As for what the UK does.....it's sounding more like they will walk away every week that passes.

With the £billions loaned to shore up the economy during the corona virus and expected £billions EU divorce settlement it looks likes back to austerity for UK.
