The 18 represents the percentage of chromium in the item, and the 10 represents nickel. The ramaining 72% is steel. 18/10 is considered the best quality stainless steel (in terms of cookware etc). It's all to do with the resistance of the product to pitting and damage, and therefore longevity.

Is it induction compatible as so e saucepans you cannot use
