Can someone please tell me the name in Spanish of the Manchego cheese you would get in a restaurant if you ordered a plate of 'jamon y queso' so I can find it in a supermarket? i.e. the one that is served as thin dry shavings with iberico ham.

Yes it is good,
But hard to work out which it is,
so in mercadona they do a selection of spanish cheeses in a board type packet,
Which are labeled individual,
I bought one of those , found the one I liked, and buy that infuture,
There used to be a spanish cheese & jamon supplier on zoco Market who would let you try before you buy,give him a go
You might have to shave it yourself from the wedge/block

Thanks Gustav, yes I'm not expecting it to come ready shaved, but just trying to find the right stuff

Good selection in the Bodega on the cv95 before Petsworld coming from San Miguel

Thank you jpeg! Anywhere nearer Rojales / Quesada? I was hoping to find it in Mercadona, but it's just like a standard wedge of cheese rather than the drier flakier consistency you get in a restaurant. I'll keep looking and, if I'm passing, try the bodega you suggest.

There is a butchers in Rojales (Andreu?), I'm sure they had a cheese counter too.

You can get Manchego in most Spanish supermarkets.
You're probably looking for curado Manchego, if you want it hard and tasty. It comes in a variety of levels of cured, similar to cheddar...mild, mature, extra mature, vintage.

It's the 'curado' I bought, vintage I think, but it wasn't what I was after unfortunately. I'll keep looking anyway thanks.

Have you tried Carrefour chese counter ?
Manchego Curado has been aged for 4 months to 1 year--the most common around 6 months like yours. It is commonly drier and starts to flake and has a more nutty flavor with caramel notes
Manchego Añejo (or Viejo) has been aged for 1-2 years. It is harder and drier still, very flaky and has definite peppery notes.
