This is our first summer in our villa and we’ve just had aircon fitted in July, it’s added about €50 euros to our bill and we only have it on at night for about 9.5hrs (we’re with Iberdrola and not on a night rate yet). We have ours set in our bedroom to bring the room temp down to 27 which is plenty cool enough and when it reaches that temp the fan just runs circulating the air. To be fair since our aircon has been fitted we’ve had visitors so it’s been on upstairs and downstairs plus some days when we’ve gone out during the hot weather we’ve left it on for the dogs We were like you trying to get our heads around how the temps worked because you wouldn’t have your heating on at 27.

The important thing is that you find a temperature that is bearable/comfortable for whatever it is that your doing. If you can sleep with the temperatures reduced from 30+ decrees down to 27° then go with that. If you want it reduced further - say to 25° Then your bills will be higher.
As far as the temperatures you choose for heating, then it depends on quite a lot of factors. If you put more layers on, wear slippers and do what you can to remove draughty then you may find that a heating setting of 21° is sufficient.
Trying to cool or heat the whole house to the same temperature will cost more. Focus on the rooms that you’re occupying and use the shutters to either keep out sunlight in summer, or keep in the warmth in winter.
We have ceiling fans in our bedrooms and living room, in addition to aircon. During summer having the fans on and the windows and door open is usually sufficient to keep the house at a sensible temperature. When we go out we obviously close all the doors/windows and turn the fans off. We also close shutters on the windows where the sun is going to warm things up. If you have dogs then leaving some windows open, and the fans on, may be an option.
We use aircon and the ceiling fan at night in the bedroom, and keep the bedroom door/windows closed to contain the cool air.

The upstairs ones all control each other, but sadly the downstairs one was inherited from the previous owner and its old enough that Lovejoy would probably have an interest in it.
