Car Insurance

I am not resident in Lo Pepin. I leave my car at Alicante Airport in a private compound when visiting. As the car is not used in the winter I wasn't intending renewing my annual policy (November 2017), opting to start a new policy in April 2018. I have been advised by my car insurance company that it is illegal to not have the car insured despite being off road and stored in a private compound.

I am not convinced but stand to be corrected.

Any advice would be welcome.

I do believe your insurance company are correct.
A neighbour of mine was fined for not having his car insured whilst parked up in his own driveway, he like you was away for a lengthy period.
Apparently, any vehicle has to have valid insurance, unlike the UK where it can be SORN.

Not sure but you must give at least one months notice that you do not want to continue with the insurance, your only problem could be if it got on fire! either electrical fault or the car next to it! also be aware that although you can take out short tearm insurance most companys won't let you cancel within the insured period unless you sell the car and some won't let you cancel at all! unless it is at the end of the policy.

Any car in your name needs to be insured at all times

Yes, according to spanish insurance law, any registered car in Spain is subject to a compulsory third party cover, even if not used temporarily.
