Can anyone tell me definitely which covid test I need from Spain to UK, Easyjet. PCR or lamp test?

You can use either. Lamp test is cheaper.
Of course, you have to book your day 2 and day 8 tests before arriving in UK.

Then don't you need to book the 2nd and 8th day one before you leave?

If I'm only going for 8 days can I book the tests for day 2 and day 5 or 6?

No. This discussion was had just a day or two ago and it was posted you have to book the day 2 and day 8 tests. You can take another test on day 5 under the "test to release" which allows you to leave quarantine early else you have to quarantine or self isolate for the whole period of your stay.
You can self isolate with family or friends during the entire stay but you are not allowed to leave the address you have given except for urgent medical reasons nor have any visitors, even other family members.
