Leafs restaurant (pueblo bravo on the lemon tree road) always have veggie options and chef is very accommodating for special requirements

Beet restaurant in Torrevieja near the fountain at the port is consistently good. Was previously called Vegetariano, but renamed after extensive facelift.
Svarog, the Russian restaurant at the seafront in Guardamar has extensive although not exclusive veggie options

had a look @ Beet Saturday,no menu or price list displayed outside for a peruse, only 2 persons in,
staff saw me looking in but made no effort to help,
