Try the 4 restuarantes on the CV855 Dolores to Elche you will not find better The Ursula, Martinos,The Estanquet and The Nugolat all famous for wood fired oven Paellas

La Noria in Rojales or Rodero in Guardamar both do excellent paellas.

Another vote for Goya’s. It’s great value as part of their menu Del Dia at 10.50 Euros.

Hi Resspiros in Rojales is very good (needs to be pre-ordered 24hrs in advance) well worth the wait.
