If you're buying a Spanish registered car in the UK then you need to be very careful. You'll probably need the previous owner to have signed a power of attorney to enable the vehicle to be transferred to you. You'll also need to check if there is any outstanding Suma or finance on the vehicle. Your life will also be much easier if there is a current ITV (with windscreen sticker and stamped card).
You won't be able to get the vehicle insured in the UK to drive over here, and it seems unlikely that you'll be able to get a Spanish insurer to touch it while it's not yours, so you're probably looking at having it delivered to Spain on a transporter.

If you buy a UK registered car then it will need to be UK legal while it's being used in Spain (taxed, MOT'd and insured) then you have up to 6 months to convert it to Spanish registration. You'll need to pay import tax, and the cost of headlamp replacement, plus the cost of ITV, registration etc.

At the end of the day, you won't save a massive amount over buying a Spanish car in Spain.

Pete.
