Most definitely, in our view the hommous from Mercadona is the best by far. Also their fresh veggies and fruit are exceptional, as is their old strong cheese. Try their dulcita cherry tomatoes, they are simply fantastic. Never tried tomatoes this good, ever.
Not sure if you are into making your own felafel but Mercadona also sell foul beans both dried and in small cans. Both are really superb.
Carrefour is good for all things vegetarian, and their sourdough bread is lovely. Try the walnut bread in Aldi, it's very nice.
If you want lovely coffee beans try Cafe Saula, organic and 100% arabica beans from Carrefour (come in a long green tin).
We buy Engevita online from Amazon Spain. These are flakes you can put on food and they taste just like strong cheese. These will cover all your Vitamin B12 requirements. Don't use them for cooking because they will lose their efficacy, just sprinkle them on already cooked food or salads, or mix it with salad dressings.

In Mercadona in the sliced meats fridge they do a non meat equivalent selection but I'd advise you add seasoning to this as it can be fairly bland. Also in the dry goods by the pastas and pulses they do bags of dried soya which I use a lot to make lasagnes, chilli's veggie rolls, etc with. If you want any recipes just send me a PM.
