Why when watching uk tv channels does it keep freezin ????

What are you watching it on? If a dish then it shouldn't be doing that. If via the internet then a. your internet speed is not enough or b. load of people are watching the same thing at the same time which slows it all down.
If a rebroadcaster dependant on the internet, then the same reasons.

If your watching via internet, (streaming) then your internet download speed has to be at a certain level, best check with your provider to find your download speed if not fast enough, the system tends to search for a signal, (hence the freezing)

On a 2 meter dish in la Florida our picture breaks up and becomes unwatchable every evening

Signal weakness.

Dish could be out of alignment
Old cable could perish / old corroded connectors
Faulty LNB or insect infestation within?
Could be localised interference, though less likely.
